Iced Lemon Loaf Recipe




Loaf cakes are always a big hit in my household and this lemon one is a favourite. In fact I'm a little bit crazy about lemon flavours in my baking.



I love the consistency of a well baked loaf cake. With a golden brown, crumbly crust on the outside and fresh moist texture on the inside, they go so well mid morning or afternoon and a nice cup of tea. They rarely last longer than a couple of days in my house.

I like to whip up this recipe if we are going visiting. It's super easy to make. I like come baring baking gifts and this  baby is always well received.


I'm sure this won't be the last loaf cake recipe to make it to a blog post!


Iced Lemon Loaf
Prep time: 10 minutes
Cook time: 35 minutes

Ingredients
  • 125g butter (softened)
  • 225g caster sugar
  • 1 large lemon
  • 2 eggs
  • 190g self raising flour (sifted)
  • 120ml milk
  • 65g icing sugar
  • 15g (approx. 1 tablespoon) butter for icing (softened)

Method
  1. Preheat oven to 190c and line a loaf tin with a baking paper case.
  2. Cream butter and sugar together. Add in rind from one lemon (save some of the rind for decorating the top of the cake once iced) and juice from half the lemon (save the juice of the other half for the icing). Whisk in both eggs, one at a time to the butter mixture.
  3. Add the flour and milk to the wet ingredients and fold in gently.
  4. Pour mixture into loaf tin, place in the oven. Bake for 35 minutes or until golden brown, checking at 30 minutes. Insert skewer and make sure it comes out clean to be sure the loaf is cooked through.
  5. Transfer to wire rack and allow the loaf to cool.
  6. For icing, whisk icing sugar with butter and juice from other half of the lemon. You can change the consistency by adding a touch more icing sugar if you wish for a thicker consistency or a touch of boiling water if you want it slightly runnier.
  7. Spread icing on top of the loaf and sprinkle the extra rind you saved earlier on top.
  8. Allow icing to set and serve fresh.
