I am lucky enough to have a lot of vivid childhood memories from quite a young age. I remember lots about life as a child from as young as 3. Family times, my dad putting me to bed and always falling asleep beside me before I did, making mud pies in the garden, climbing trees (I was quite the tom boy) and going to nursery.
I remember the cook at my nursery and the amazing meal times we had at lunch. In my head I remember 3 course gourmet meals every day - but perhaps that may be distorted reality. The one dish I clearly remember is her amazing Pineapple Crumble.
For years, when nursery days were well and truly behind me I would remember this pineapple crumble concoction and want that taste again. However this was not a traditional crumble recipe so any other version I would have would never hit the spot. The crumble I remembered had almost a flapjack consistency top incorporating whole rolled oats and coconut.
As soon as I was able, I developed my own recipe for this and numerous attempts got it just right. The caramelisation of the pineapple, the taste of cinnamon, and the crunchy, flapjack like top - it all came together. This is one of my favourite desserts to make particularly on colder evenings. I can tell it's going to be a family favourite for many years to come.
This is, as the title suggests crumble with a twist. It's not made the traditional way by rubbing in the butter to the flour mixture and therefore the top of the pudding is a bit more put together. This is what creates top chewy but crunchy top that I had always remembered and goes so well with the flavour of the pineapple.
I normally serve this with ice cream or frozen vanilla yoghurt however this week I found a tub in the freezer section of my local Sainsbury's that is not quite ice cream and not quite frozen yoghurt but made of coconut milk. Coconut and pineapple are a match made in heaven for me and this was no exception when adding to my freshly made pudding.
Pineapple Crumble Recipe
Prep time: 10 minutes
Cook time: 40 minutes
Ingredients
- 510g canned pineapple chunks
- 3g ground cinnamon (1 tsp)
- 40g caster sugar (aprx 3 tbsp)
- 100g rolled oats
- 40g coconut
- 80g plain flour (sifted)
- 100g soft brown sugar
- 100g butter (melted)
Cooking Directions
- Preheat oven to 180c
- Add pineapple to small oven proof dish and sprinkle over the caster sugar and cinnamon. Mix through so the pineapple is well coated.
- In a mixing bowl add together rolled oats, coconut, plain flour and brown sugar. Add melted butter and mix through.
- Cover the fruit with crumble mixture and bake in the oven for 40 minutes.
- Allow to cool for 5 minutes before serving.
