Baked Pancake Bites Recipe

If you are a regular reader of my recipes you will know that I love simple baking. This recipe is no exception. It actually ticks three very big boxes for me.
  1. Its quick and easy.
  2. You can have some fun an be creative with it, which is also great when you're baking with kids.
  3. It has no sugar in it so I am able to share the healthier ones with my baby girl who I am keeping free of refined sugar during the weaning process.

And they are pancakes. Who doesn't love pancakes? These are not your typical pancakes and are actually baked in muffin tins. This cuts out all the energy you would normally spend getting the heat right on the pan, cooking in batches, flipping and trying to get the perfect golden colour on each side.



The fun part comes with how you want to customise these pancakes. They are great by themselves and can be topped with maple syrup, jam, yoghurt etc. Or you may want to spruce them up and add a little more flavour. Once the pancake batter is poured into the muffin tins you can add whatever your heart desires. For this batch I kept 3 plain, 3 stuffed with blueberries, 3 topped with extra lemon rind, brown sugar and coconut and 3 filled with apple puree. 





Baked Pancake Bites

Prep time: 10 minutes
Cook time: 15 minutes
Makes: 12

Ingredients
  • 150g plain flour (sifted)
  • 1 1/2 teaspoons baking powder
  • 1 egg
  • pinch of salt
  • 240ml milk
  • 10g melted butter
  • 1 teaspoon lemon rind
Cooking Directions
  1. Coat 12 hole muffin tin with non stick spray. Preheat oven to 180 degrees.
  2. Combine all dry ingredients, beat in the egg and milk. Add milk slowly and make sure the batter is smooth. Whisk in butter and lemon rind.
  3. Pour batter into a large jug (this makes it easier to get the batter evenly into the muffin tin). Evenly pour pancake batter in the muffin holes. You can bake plain or at this point add whatever fillings and toppings you desire.
  4. Bake in the oven for approximately 15 minutes until slightly browned on top. Check on the pancakes regularly so you don't overcook them.
  5. Allow to cool slightly and use a knife to slide out. Best served fresh and warm but will stay good in refrigerator for 2-3 days.

  5. Yes, peanut butter would work. I haven't tried them but someone contacted me today who made them this afternoon using peanut butter and she said they were delicious. I'm going to have to try them x

  7. Ok, love this idea. I love pancakes but hate making them - I never get the heat right/never flip in time/etc.etc.etc. These seem so simple and yummy! Definitely going to try and think I may do them with raspberries!
