3 Ingredient: Peanut Butter and Banana Cups Recipe

In my dreams, I have a toddler who eats everything and enjoys a varied diet. She loves everything I put in front of her and I happily spend hours in the kitchen whipping up creations for her to enjoy.

In reality, I spend hours in the kitchen desperately creating meals and developing recipes. Hoping. Hoping the fruits of my labour will pay off. In reality I have a fussy toddler and she refuses 50% of the things I put in front if her. I still hope that her tastes will develop so I still spend hours in the kitchen preparing wholesome and healthy meals and snacks for her to try. It's hard, but we are getting somewhere.

As we are getting further and further on in the weaning process I am learning more about her palate and the kinds of things she likes. And sometimes, very occasionally, I make her something that she absolutely loves. Something that she can't get enough of. Something that she will never refuse (she has a track record of eating something one day and refusing it the next). Something that passes the Baby Girl taste test, a taste test of the toughest kind.

This recipe is one of those recipes. I love it for the easiness and the fact that it has simply 3 ingredients. I love that it's the perfect quantity to be able to provide fresh snacks for a few days without having any going to waste. I also love that as a snack, this is a great alternative to pre packaged baby snacks. Although I do really like having a stash of healthy Organix or Ella's Kitchen snacks handy, there's nothing better than home made.



Peanut Butter and Banana Cups


Prep time: 5 minutes
Cook time: 15 minutes
Ingredients
  • 1 ripe banana
  • 70g or 3/4 cup oats
  • 1 heaped tablespoon peanut butter
Cooking Directions
  1. Preheat oven to 180ºC
  2. Grease 4 cupcake cases
  3. Use a fork to mash banana, mix in peanut butter and then the oats
  4. Once combine spoon mixture into muffin cases
  5. Bake for 15 minutes

  5. Oh wow this is perfect! My boy loves bananas and peanut butter and I'm always feeling guilty about not being a mother that has freshly baked goods for him when he gets back from nursery.
