Carrot & Coconut Bread Recipe - Healthy Baking

This week's recipe is a little bit different. The mix of ingredients are healthier options. It contains no butter, no refined flour and no refined sugar but at the same time it's still super tasty. My husband, J is my harshest critic and has no care for 'health' when it comes to baking and even he can't get enough of this. So it's good news, you can feel less guilty when you're devouring this tasty delight and not feel like you are missing out in any way.


Some would argue that this is recipe is not bread. I would say it's in between cake and bread but not exactly either. This is actually my take on the traditional banana bread so I have named it accordingly. The loaf forms a lovely crusty outside and a tender, moist inside and is a winner with everyone who has tried it.



I enjoy my slice with a cup of herbal tea or coffee for an afternoon snack.

Carrot & Coconut Bread

Prep time: 10 minutes
Cook time: Aprx 60 minutes
 
Ingredients
  • 300g grated carrots (aprox 2 large)
  • 100g coconut oil (melted)
  • 110ml maple syrup
  • 2 eggs
  • 5 ml vanilla essence
  • 180g wholemeal flour
  • 50g dessicated coconut
  • 2.5g baking soda (1/2 tsp)
  • 2.5g baking powder (1/2 tsp)
  • 3g salt (1/2 tsp)
  • 3 g cinnamon (1.5 tsp)
  • 1 g nutmeg (1/2 tsp)

Cooking Directions
  1. Line loaf tin with baking paper. Preheat oven to 180 degrees.
  2. Combine melted coconut oil, maple syrup and vanilla together. Beat in eggs and add grated carrots to the mixture.
  3. Sift in flour, baking powder, baking soda and spices. Add desiccated coconut and mix until well combined.
  4. Bake in the oven for approximately 1 hour. Check from 45 minutes and test with a skewer, it's ready when it comes out clean.
  5. Allow to cool before serving. Cut in slices with a bread knife and serve.

  4. Yummy! That looks fabulous. Baking is my favourite type of cooking. I often experiment with healthier treats with varying degrees of sucess! I'll definitely be trying this out. Also interested in answer to Amy's question. Your photos are fab and at some point I hope to stop taking mine with I phone 😳

  5. Me too! When I started my blog I intended to include all kinds of recipes but when I really thought about it, my baking is where I really put all my love so I thought I'd stick with sharing my baking recipes.
    I take all my photos with my iPhone 6 so no need to stop using your phone. Just make sure it has a good camera. I put a lot of thought into the setting and my angles and then edit the photo with a simple photo editing app. I've been working hard on the photos I put on my blog so it means a lot that you like them, thank you x
