Butternut Squash & Asparagus Mini Quiche Recipe

I'm loving that summer is pretty much upon us. This means summer fashion, getting some colour, having lots of fun outside and summer recipes. I love a good mini quiche in the summer. It can be served cold with salad and you can have fun with lots of summer flavours.



Last weekend on the lovely warm Sunday we had, we had a picnic at our local park. I took a lot of left overs and things that were in our fridge but I also made a fresh batch of these quiches to go in our basket. They were the perfect addition so I just had to share them with you.

Butternut Squash & Asparagus Mini Quiches
Makes: 12
Prep time: 30 minutes
Cook time: 20 minutes
Ingredients
  • 1 portion shortcrust pastry
  • 250g butternut squash (finely diced)
  • 100g asparagus (finely diced)
  • 2 eggs
  • 200g creme fraiche
  • 75g cheddar cheese
  • salt & pepper to taste
  • butter for greasing tin
  • 1 teaspoon olive oil for roasting vegetables
 Instructions
  1. Preheat oven to 200ºC. Lightly grease 12 hole muffin tin with butter.
  2. Roll out pastry to the thickness you desire and cut into 12 circles with a cookie cutter.
  3. Line muffin tray with pastry circles and place the tray in the fridge to chill.
  4. Lightly coat butternut squash and asparagus with olive oil and roast for 15 minutes.
  5. Whisk eggs until just combined, don't add to much air. Add crème fraiche, cheddar cheese, salt and pepper and mix together.
  6. Take muffin tray out of the fridge and evenly spread the butternut squash and asparagus mixture within the pastry cups. Pour egg mixture right to the top.
  7. Bake for 20 minutes until pastry is well cooked. To test, slide one of the quiches out of the muffin hole and make sure pastry is well cooked on the bottom.
  8. Allow to cook for 10 minutes. Can be served warm or cold.


I left my quiches in for probably a minute or two too long which is why they are extra golden on the top. I think the golden top just added to the yummy flavour but keep an eye on them and take them out before if you want them a tad less done than this.
