No Bake Peanut Butter Bar Recipe

I'm all about sweet treats that my toddler can enjoy without me feeling too guilty. This recipe contains two of my daughters very favourite things:

Breakfast cereal
Peanut butter

She loves anything in bar form. They're perfect for little fingers and for taking out and about. They're no bake. The best bit is there are no nasties like refined sugar and flour.

If I'm feeling really generous I'll add a drizzle of dark chocolate on top on the bars.

The important element of this recipe is in the peanut butter. In the ingredients of many peanut butters there are both palm oil and sugar, both of which they could do without. Hunt around for an all natural peanut butter to use. I'm currently loving Pip & Nut which I found in my local Sainsbury's. It's simply roasted peanuts with a little sea salt. Nothing more. Nothing less.

Peanut Butter Bars

Prep time: 5 minutes
Chill time: 2 hours
Servings: 14 bars

Ingredients
  • 160 grams porridge oats
  • 200 grams natural peanut butter (3/4 cup)
  • 115 grams honey (1/3 cup)
  • weetabix
  • 30 grams dark chocolate (optional)

Cooking Directions
  1. Combine peanut butter and honey in a large mixing bowl, mix well
  2. Crumble weetabix into fine pieces and add with the porridge oats to the peanut butter mixture
  3. Mix well, get your hands in there if you need to make sure all the ingredients are combined
  4. Line a medium sized baking tray with baking paper and press mixture into the tray, use your hands to make sure the top is even
  5. If you want to add chocolate drizzle either melt the chocolate on the stove or pop it into a microwave safe container and blast it for 20 seconds at a time until it's melted
  6. Once the melted chocolate is runny consistency use a fork to drizzle over the bar slab
  7. Place the bar slab in the fridge and chill for a couple of hours
  8. When ready cut into 14 even bars
  9. Pop in a sealed container to store in the fridge to enjoy whenever your babies (or you) fancy!

This recipe is not suitable for babies under 12 months old because it contains honey

If you love this recipe and want to switch it up, try throwing in some dried fruit and/ or making them in ball form. Enjoy!

Kat x

  1. Looks great! Any suggestions for a weetabix substitute in the US?

    1. Thanks! You could take out that component completely and add some more oats. Otherwise any type of crushed wheat flake cereal or even corn flakes ;) x
