Corn & Cream Cheese Fritter Recipe



Today is baby girl's 8 month birthday which means that she has been eating food for two months now. We are following a mixed spoon fed and baby led approach. I still have heart palpitations every time she gags or takes a mammoth bite so I'm quite careful with the solid foods I give her. I am seriously surprised how well she chews given she has no teeth.

I like to make batches of purees and freeze them for the week which I normally feed her for dinner. For lunches I love to cook things that we can both share and we often eat things like scrambled eggs, pastas with sauce, avocado, soft fruits and vegetables and savoury muffins.

I have been turning to Instagram for my lunchtime inspiration and recently discovered this fabulous lady Beth at emily.eats. Beth's Instagram posts really help inspire me how to fill baby girl with goodness. She is part of a wider group called the Insta Wean Team, full of very talented mummies like Beth who post pictures and recipes of their creations for their little ones. You can search #instaweanteam on Instagram to see their posts or check out their Facebook page. Every Sunday these ladies select a key ingredient and throughout the week share their recipes.

A few weeks ago I came across some yummy looking pea fritters on emily.eats instagram and I thought they would be a perfect lunch time meal for baby girl and I so I made them right away. They were a big hit with both of us so I have since tried other variations including sweet potato and corn.

This week we have been loving making them with sweet corn. The fritters come out soft and fluffy and basically melt in your mouth with an explosion of cream cheese pockets. Just yummy!



As this recipe is baby friendly it doesn't incorporate salt but you could use salted corn and/ or season with salt if you're not cooking this for little ones.



Corn & Cream Cheese Fritters
Prep time: 5 minutes
Cook time: 10 minutes
Ingredients
  • 165g tinned sweet corn (unsalted)
  • 1/2 onion (chopped)
  • 75g plain flour (sifted)
  • 1/4 teaspoon baking powder
  • 1 egg
  • 1 tablespoon cream cheese
  • 1 tablespoon butter
  • To season ground black pepper

Cooking Directions
  1. Add sweet corn and onion together and blend to a puree consistency.
  2. In a medium bowl combine flour, baking powder, egg and cream cheese, mix in sweet corn puree. Season with a little ground black pepper. 
  3. Melt butter in pan and drop batter by spoonfuls to the pan, cook for 2-3 minutes on each side until the fritters are golden.
  4. Cool on paper towel to allow excess butter to soak up before serving.
I cut these up for baby girl in chip shapes perfect for little fingers and serve with some fresh fruit and then serve mine with salad and tomato relish.

  3. Oh god, I know what you mean about being terrified every time your little weening one gags on a piece of food you've just fed them - carrots were usually the culprit in my case. Don't worry, my two have lived to tell the tale (mine are 14 and 10 years old now). Those fritters do look really delicious! Tx

    1. When did you stop being scared? I don't want to hold her back from eating a variety of things but unless things are really soft I find it very hard to give to her x
