Iced Lemon Cookie Pops: Baby Shower Baking

Recently I had my NCT group over for morning tea. There are 7 of us and 18 months on, 3 of them are very pregnant (can you believe how brave they are?). So being the party planning fiend that I am, I decided for morning tea we I would put on a little baby shower.

I was inspired by a gorgeous shot that I found on Instagram and decided that I would do a take on it with cake, cookie pops and a chalkboard backdrop. I'm mad about anything that you make into a pop so the cookie pops were what I based the whole thing around. I loved that I could use pink and blue icing to go with my guess a gender theme. I hadn't made these before but I used a similar recipe to my rainbow orange biscuits but changed the flavour to lemon and didn't put cream cheese in the icing. I don't know about you, but I'm mad about anything lemon flavoured!



So firstly, here's the whole look of the treat table. The cake I made was a polka dot cake. Similar to the one I made for Baby Girl's first birthday just with pink and blue polka dots and the posy decorations are available at my online store Little Bump Shop.



Lemon Cookie Pops

Prep time: 30 minutes
Cook time: 15 minutes
Servings: 30

Ingredients
  • 325g plain flour
  • 200g butter
  • 125g caster sugar
  • 1 lemon (zested and juiced)
  • 2 egg yolks
  • 300g icing sugar (sifted)
  • pink and blue food colouring
  • 30 cookie pop sticks
Cooking Directions
  1. Preheat oven to 180ºC and line tray with baking paper.
  2. Add butter and flour together, mix in processor or rub together with fingers until mixture resembles breadcrumbs.
  3. Add sugar, lemon zest and egg yolks and mix in processor or knead until mixture is a dough consistency.
  4. Roll bits of dough into small balls aprox 1.5cm diameter, insert cake pop into the middle and place on baking tray, this should make 40 pieces. Flatten dough balls with the end of a fork. Leave enough space between them as they will expand when baked.
  5. Bake for 15 minutes or until golden brown. Make sure you regularly check on them as they are better soft than overcooked. Once baked, transfer the cookie pops to a rack and allow to cool.
  6. To make the icing, add 3 tablespoons of lemon juice, 1 tablespoon at a time and mix until smooth. Add more juice if the mixture is too thick. You can add water if you don't have enough lemon juice. Make sure not too add to much liquid so the icing is a spreadable paste.
  7. Once you are happy with the icing, split in two and colour one potion pink and one portion blue.
  8. Use knife to ice cake pops. Leave laying down until icing is completely set.



This is such a great recipe that you can use for whatever your imagination desires. You can do any kind of colour or flavour cookie pops. You can ditch the sticks and just make good old fashioned iced cookies (I did a mixture in my baby shower baking) or you can even sandwich the two together


For the purpose of this baby shower I displayed them in these cute mini milk bottles and added a pink and blue ribbon to finish it off. Im chuffed with the way they turned out and how they tied into the baby shower theme.

The cookie pops/ cookies are really great for any kind of baby shower or party treat table as you can be as creative as you want it the colours and they look  fabulous on the tables and most importantly taste great!
