This recipe ticks all of my boxes and is a regular on baby girl's lunchtime menu (in moderation). I have included my favourite pinwheel flavour combination - ricotta and spinach - but you can really use any ingredients as long as you have some good old puff pastry. You can even make them sweet with fillings like fruit.
This recipe makes 20 mini pinwheels and can be frozen. I find this super easy. One batch can last me a long time, using 2 or 3 at a time. The batch can be frozen for up to 3 months.
Ricotta & Spinach Pinwheels
Prep time: 15 mins
Cook time: 20 mins
Ingredients
- 375g Refrigerated Puff Pastry
- 250g spinach leaves
- 180g ricotta
- 1 egg (beaten)
- 1 tbsp butter
- salt and pepper to taste
- Preheat oven to 220ºC and line tray with baking paper.
- Wash spinach leaves. Leaving a bit of excess water on the leaves add to a saucepan and allow to wilt at medium heat. After wilting for 5 minutes take the saucepan off the heat and allow spinach to cool. Once you are able to handle it squeeze excess water from the leaves and pour out any remaining water from the saucepan.
- Turning the saucepan to medium heat again melt butter and add spinach, nutmeg and salt & pepper to season. Toss with tongs so the spinach is well seasoned, take off the heat and put aside.
- Unroll your sheet of puff pastry onto an even surface and cut in half so you have two bits of pastry to work with. If you would like larger pinwheels you can use the whole sheet as one.
- With a knife spread the ricotta cheese on the pastry. Leave a gap at the end to allow the pinwheel to stick together.
- Chop cooked spinach into small pieces and spread it over the ricotta.
- Roll up your pinwheel to enclose the spinach and cheese, brush pastry with egg and then cut into 1cm pieces.
- Place pinwheel pieces on lined tray and bake in the oven for 20 minutes or until the pastry is golden brown.
- Can be served hot or cold.
