Vegetarian Quorn Mince Casserole Recipe

I've mentioned before that dinners can sometimes be a bit complicated in my house. I've been working hard on making them much more simple and meal planning has really helped me with that. The complication is that I'm a vegetarian (that eats some fish) and both hubby and Baby Girl are meat eaters. It often means I have to whip something up quickly for myself if I'm making a hearty meat dish for my family.

The prerequisite when I'm cooking for myself is that it's quick, healthy and ideally I can divide them into batches for freezing so that I can enjoy a few times over. Often when I'm cooking dinner, I go with instinct and add a bit of this and that and no dish is ever the same. This is why I don't really publish many dinner type recipes. By the time I finish, I've forgotten how I made it.

One evening last week I decided to switch on the camera and record myself whipping up a veggie casserole for myself. I must say it was the ultimate form of multi tasking because as I was recording I had a meat dish on the go too, as well as a toddler wandering around my feet who 50% of the time wanted cuddles and 50% of the time was fascinated with the tripod. Thank goodness for editing!

Watching this video back allowed me to record exactly how I made it so I thought I would include this as a recipe on the good old blog and publish the video on my YouTube channel. Whilst this is a recipe that I made for myself I think it's a great one for the family too. This can be altered as a meat dish by switching the quorn mince to beef mince. You can also shake up the veggie combinations to what ever you fancy. I cheated a little as I brought a packed sweet potato and butternut squash that was already cubed. Let's face it, sometimes it's quite a task to cut a butternut squash and sometimes I need a shortcut.



Quorn Mince Casserole

Prep time: 5 minutes
Cook time: 40 minutes
Servings: 4-5


Ingredients
  • Half broccoli (chopped)
  • Aprx 1.5 cups chopped butternut squash/ and or sweet potato cubes
  • 1 onion (diced)
  • 300ml vegetable stock
  • 1 can/ box chopped tomatoes (390g)
  • 2 cloves minced garlic
  • seasoning of choice
  • to taste salt
  • to taste pepper
Cooking Directions
  1. Coat large pot in olive oil spray and brown onions and garlic at a medium heat
  2. Add quern mince, stock and chopped tomatoes and mix well
  3. Add broccoli and butternut quash/ sweet potatoes, top of pt with boiling water if there isn;t enough liquid in the pot, be sure to not put too much. Ingredients don't need to be completely submerged.
  4. Add seasoning of your choice as well as salt and pepper
  5. Bring to boil at a high heat 
  6. Once boiled, reduce to a low heat, mix ingredients well, cover pan and simmer for 40 minutes
  7. Once ready the liquid will be a gravy like consistency.
  8. Allow to cool slightly and serve with a fresh salad. Enjoy!

The end result was delicious and I love that even though it feels like comfort food its super low in calories and packed with goodness.

  1. it actually looks pretty good! im not a veggie but I eat very little meat and prepare mostly veggie meals. my hubby and boy eat meat though. it is tough coordinating it all! I've found adding mushrooms to meals as MY main is a great substitute, as well as quorn type things :)

    1. I thought I was the only one! It's nice to see I'm not alone LOL. Yes mushrooms as a substitute are fab! I'm also a big fan of Quorn nuggets as a little side something :) xx

  2. I haven't cooked much with quorn, and not sure I've ever given it to the kids - if I fancy a veg version of mince or cottage pie I usually use red lentils - this does look delicious :)

    1. I think this would work well with lentils too, and beef. It also goes well with so many sides. Salad, potatoes, rice, bread.... x
