In my old age I am really beginning to appreciate home made food on a whole new level. I always liked home cooking anyway but I'm finding now I am pushing my normal boundaries and trying to make things that previously I would automatically just go for the shop brought version. A perfect example of this are flour tortillas. Am I the only one who had never thought twice about buying a perfect pack of premade tortillas when preparing a Mexican feast?
Well, I've started making my own at home. I didn't realise how simple it was - this recipe doesn't even call for yeast. Most importantly they taste so good and by being in charge of every element I make them slightly thicker than the shop brought ones. Just how I like them. This is what you call delightful, honest, home made food.
Flour Tortillas
Prep time: 30 minutes
Cook time: 12 minutes
Ingredients
- 375g plain flour (sifted)
- 5g baking powder (1 tsp)
- 6g salt (1tsp)
- 80ml olive oil (1/3 cup)
- 240ml warm water (1 cup)
Cooking Directions
- Combine all dry ingredients.
- Add water and oil and mix until mixture forms a dough, once mixture comes together it's easier if you use your hands to form the dough in a ball.
- Break dough ball in half and then half again and once more so you have 8 evenly sized ball portions and flatten with the palm of your hand. Cover with a clean tea towel and rest for 15 minutes.
- Once rested use a rolling pin to roll each tortilla the size of a dinner plate (don't stack uncooked tortillas on top of each other or they will stick).
- Heat a small amount of oil in a pan and place tortillas in the pan one at a time. Cook on each side for a minute or until it bubbles slightly and browns in raised areas. Stack on plate and repeat this until all tortillas are cooked.
I've made my vegetarian tortilla mixture the same way for as long as I can remember and it's so easy. I brown one diced onion in a little bit of olive oil. Add one tin of kidney beans, one tin of baked beans, one tin of canned tomatoes and one packet of tortilla seasoning. Simmer for about 45 minutes until liquid has been reduced and mixture is thick. I then prepare my tortilla with the bean mixture, chopped tomatoes, salsa, shredded lettuce, shredded cheese and crème fraiche. My mouth is salivating just writing this down!

ReplyDeleteI made these last week and I think you've got the right idea. I broke the dough into 16 pieces instead of 8 and I think the chewier ones tasted better. And reheated better too! Olive oil sometimes has an after taste in baking. Can you taste it in yours?
ReplyDeleteYeah I have tried it with smaller pieces and it was quite difficult to work with. I much prefer the larger and thicker tortillas. I haven't noticed the olive oil taste *mental note to look out for that next time*. I wonder if sunflower oil would be an option? X
