The recipe I present to you today took lots of perfecting. I love potatoes and I love pancakes so I always knew these two would be a match made in heaven but it did take me many attempts to get the batter just right.
This is another one of my baby led weaning recipes that I like to enjoy with my daughter. I still make her purees separately as I want her to get accustomed to many different flavours (however I must say in the last couple of weeks she has been developing a little fussiness), but I try to balance that with meals that we can share together. I'm still terrified of her choking so these pancakes are soft and fluffy - easy for her gummy chews. If you're making this baby friendly just omit the salt from my recipe. You can always add salt on top of your own pancakes once they are cooked.
This is also a great one if you're wondering what to do with your left over mashed potatoes. I have had this dish for breakfast, lunch or dinner. It's very versatile! A great way to have it for breakfast is with bacon and eggs.
Cooking Directions
I serve these to baby girl chopped in chip shapes with some cucumber sticks and sour cream. For me, I make a salsa with tomato, spring onion and basil and I top with cheddar cheese and sour cream. It's truly delicious. Try it!

Potato & Spring Onion Pancake Recipe
Prep time: 25 minutes
Cook time: 20 minutes
Ingredients
- 3 medium sized potatoes
- 4 spring onions (finely chopped)
- handful parsley (finely chopped)
- 225g self raising flour (sifted)
- 250ml milk
- 2 eggs (beaten)
- To taste salt & pepper
- olive oil for frying
- Boil potatoes on stove top until soft. Allow to cool and then mash. Combine with spring onions and parsley. Place aside.
- Add sifted flour, salt and pepper to a large bowl and make a well in the middle. Mix milk and eggs in a jug and gradually pour in well using a whisk to mix together. Stir in the potato mixture until smooth and combined.
- Heat olive oil in a large saucepan and spoon tablespoons of batter for each pancake (I normally cook 4 at a time). Fry on one side for 3 minutes and then flip, flatten and fry on the other side for 3 minutes until golden brown.
- Repeat with the remaining batter. Should make 12.
