Crustless Quiche Recipe

This week has been a very busy week which has meant dinners have been quick and easy. One of my favourite meals to make in a hurry is crustless quiche. It's a healthier option without the pastry. It is delicious and can be adapted to include any ingredients you have in your fridge at the time.



Chop the onion into small pieces and fry. I  use fry light olive oil spray. It only has 1 calorie per spray.

Chop the rest of your ingredients. I like to use spinach and tomato.


Mix all ingredients together and put in baking pan. As I'm a vegetarian and J isn't, I normally fry up a rasher of bacon to put in his. This is the main reason why I make separate quiches for us rather than one big one.

Bang in the oven for about 30 minutes and bake. Once out of the oven it will be very hot so allow to cool for at least 10 minutes before serving. I serve it with an ample side of salad. Its so simple but so good.

From this recipe I get enough mixture to make 2 individual quiches plus a mini one for baby girl, you can double the recipe for a family size quiche.

Potato and Onion (boil potato chunks)
Asparagus
Salmon and Watercress
Chicken and Broccoli

Recipe - Crustless Quiche

Serves 2 (double the quantities for a family size) 
Preparation time - 10 minutes 
Cooking time - 30 minutes 
 




Ingredients  

1/2 Onion (diced)  
Fry light or olive oil for frying onions 
3 x tomatoes chopped  
1 x large handful of spinach leaves 
5 eggs
1.5 cups light cheese
Salt and Pepper to taste
Butter for greasing quiche pan





Method
Preheat oven to 190C and grease baking pan.
Brown onions on stovetop using fry light or olive oil.
Beat egg, mix in cheese and then  add the tomato and spinach leaves to your mixture, add salt and pepper to taste.
Pour mixture into baking pan, bake in oven for 30 minutes.
Allow to cool for 10 minutes before serving.
