Self Saucing Chocolate Pudding Recipe

I have so many early family memories based around food. My mum is the world's best cook and even though as we were growing up she was studying full time, working full time and being a full time mum and wife she always made sure we had wholesome home cooked meals. She is definitely my inspiration for providing the same for Baby Girl. She is also the reason behind both my love of food and sharing that with people.



There are a few favourites that rotated our menu and today I am sharing a very special family recipe with you. When we deserved a treat mum would make us the most delicious puddings. To me, they are the ultimate comfort food and today I bring them out more often in the winter months.

This particular self saucing chocolate pudding recipe is my favourite. The magic happens with the sauce. The technique is to prepare the batter and then add the sauce components to the top of the uncooked pudding mix. During the cooking process this magically falls to the bottom of the dish. This pudding is chocolate goodness on a plate.


It has a crisp top, spongy centre and a rich chocolate sauce on the bottom. Delicious!



Self Saucing Chocolate Pudding

Prep time: 10 minutes
Cook time: 30-40 minutes


Ingredients

pudding mixture
  • 130g (1 cup) self raising flour (sifted)
  • 3 tablespoons cocoa
  • 120g (1/2 cup) caster sugar
  • 1 egg
  • 1/2 teaspoon vanilla essence
  • 125mls (1/2 cup) milk
  • 85g butter
for the chocolate sauce
  • 180g (3/4 cup) caster sugar
  • 3 tablespoons cocoa
  • 250ml (1 cup) boiling water
for the top of the pudding
sprinkle of icing sugar

Cooking Directions
  1. Preheat oven to 180ºC and grease medium sized baking dish with butter
  2. In a bowl combine dry ingredients and then whisk in milk, vanilla essence, butter and then egg. Stir until well combined.
  3. Pour mixture in to baking dish.
  4. Combine remaining caster sugar and cocoa and sprinkle on top of the pudding batter. Gently pour boiling water over the top.
  5. Bake in oven for 30-40 minutes. Pudding is ready when most of the sauce has diapered from the top and the top of the pudding springs up when poked. Be careful not to overcook or sauce will be absorbed.
  6. Sprinkle icing sugar on top of the pudding and serve hot



This is the perfect dessert to share around the table as a family. I definitely have some wonderful memories of enjoying chocolate pudding with mine and I hope you can create some of your own whilst enjoying my super special recipe from my very own mummy.
